Air Fryer Buttermilk Fried Chicken

Air Fryer Buttermilk Fried Chicken

What I like about this air fryer method is that the crust can get properly crisp without deep frying, but only if the chicken has enough space and enough oil spray. The part I pay attention to most is any pale, dry flour spots after flipping, because those are the places that tend to stay chalky instead of browning.

This version keeps the process straightforward: bone-in thighs and drumsticks marinate in buttermilk, then get a seasoned flour-and-starch coating for a lighter, crisper finish. Use 380°F (193°C) as the starting point, cook in batches if needed, and use 165°F (74°C) as the final doneness check.

Ingredients for Air Fryer Buttermilk Fried Chicken

Close-up of Air Fryer buttermilk fried chicken showing a crunchy golden crust and juicy interior
  • 2 1/2 to 3 pounds bone-in, skin-on chicken thighs and/or drumsticks (about 1125g to 1150g)
  • 2 cups buttermilk (about 480g)
  • 1 1/2 cups all-purpose flour (about 180g)
  • 1/2 cup cornstarch or potato starch (about 60g)
  • 2 teaspoons salt, divided
  • 1 teaspoon black pepper
  • 2 teaspoons sweet Hungarian paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 to 1/2 teaspoon cayenne pepper
  • Cooking oil spray, as needed

Spice note: In a dry coating like this, finely ground spices from Selefina mix more evenly into the flour, and the paprika helps give the crust a warmer color in the air fryer.

If you want a more herb-forward crust, add 1 teaspoon dried thyme or oregano to the flour mixture. For a little more tang and heat, stir 1 to 2 tablespoons hot sauce into the buttermilk marinade.

The starch matters here. I find the flour-and-starch combination gives a lighter, crisper coating than flour alone, which helps in the air fryer where browning can be a little less even than deep frying.

How to Make Buttermilk Fried Chicken in the Air Fryer

Air Fryer buttermilk fried chicken pieces in the basket with golden crisp coating
  1. Marinate the chicken: Put the chicken in a large bowl or container with the buttermilk and 1 teaspoon of the salt. Turn to coat well. Let it sit for at least 15 minutes, or refrigerate for up to 12 hours.
  2. Mix the coating: In a wide bowl, whisk together the flour, cornstarch or potato starch, remaining 1 teaspoon salt, black pepper, paprika, garlic powder, onion powder, and cayenne. Make sure the starch and spices are evenly blended so you do not get clumps or bland patches.
  3. Dredge the chicken: Lift each piece from the buttermilk and let the excess drip off. Coat in the flour mixture and press lightly so it adheres well. Set the coated pieces on a tray or plate for a few minutes so the coating can hydrate slightly and cling better in the air fryer.
  4. Preheat the air fryer: Preheat to 380°F (193°C) for 3 to 5 minutes if your model benefits from preheating. Lightly spray the basket or tray with oil.
  5. Arrange and spray: Place the chicken in a single layer with space between pieces. Do not crowd the basket. Spray the tops lightly but generously with oil so the coating has enough surface moisture to brown.
  6. Cook the first side: Air fry at 380°F (193°C) for 11 to 16 minutes, until the coating starts to look dry and the edges begin turning golden.
  7. Flip and respray: Turn the chicken, then respray any pale or floury spots. Cook for another 11 to 16 minutes. If your air fryer browns unevenly, rotate the pieces or trays at this point.
  8. Check for doneness: Start checking smaller drumsticks early, especially if your air fryer runs hot. The chicken is done when the coating is deep golden and crisp and the thickest part reaches 165°F (74°C) on an instant-read thermometer without touching the bone. Total cook time is usually 22 to 32 minutes, depending on piece size and air fryer model.
  9. Rest before serving: Let the chicken rest for 5 minutes before serving so the juices settle and the coating stays crisp longer.

Air Fryer Time and Temperature for Buttermilk Fried Chicken

380°F (193°C) is the best starting temperature here. It is hot enough to brown the coating and render some fat from the skin, but not so aggressive that the outside darkens before the bone-in chicken cooks through.

The usual total cook time is 22 to 32 minutes. Thighs and drumsticks do not always finish at the same pace, and basket-style and oven-style air fryers can brown very differently.

I rely more on the visual cue than the clock here. Look for a crust that is golden and crisp with no dry flour left on the surface, then use 165°F (74°C) in the thickest part as the final check.

Why Your Air Fryer Fried Chicken Turned Soft or Pale

If the coating stayed soft, the basket was probably too full or the pieces were touching. That traps steam, and steam softens the crust before it has time to set.

If the coating looked pale or floury, the usual cause is not enough oil spray. Preheating helps too, and some models simply need a few extra minutes or a mid-cook rotation for even browning.

This is where the texture can go wrong most easily. I would rather spray the pale spots again after flipping than add extra flour, which usually just leaves dry patches on the finished chicken.

Variations

Gluten-Free Buttermilk Fried Chicken

Use a 1:1 gluten-free flour blend in place of the all-purpose flour and keep the starch in the coating. The crust can be a little different in texture, so judge doneness by color, crispness, and internal temperature rather than expecting the exact same finish.

Dairy-Free Fried Chicken

Replace the buttermilk with unsweetened dairy-free milk mixed with 1 tablespoon lemon juice. Let it stand briefly, then use it as the marinade. Avoid sweetened milk alternatives, which can brown unevenly.

What to Serve with Air Fryer Buttermilk Fried Chicken

Serve the chicken hot with coleslaw, mashed potatoes, potato salad, corn on the cob, biscuits, or a simple green salad. Hot honey or barbecue sauce works well on the side if you want extra flavor without softening the crust in the basket.

How to Store and Reheat Air Fryer Buttermilk Fried Chicken

Cool leftovers, then refrigerate them in an airtight container for up to 3 to 4 days. If you need to stack pieces, put parchment between layers.

To reheat, use the air fryer at 350°F (177°C) until the chicken is hot and the coating has crisped back up. Start checking early so the crust does not overbrown and the meat does not dry out.

The coating will not be exactly the same as when freshly cooked, but reheating in the air fryer works much better than microwaving. If you want to prep ahead, marinate the chicken in advance, but do not let the coated raw chicken sit too long before cooking or the crust can turn soggy.

  • Use an instant-read thermometer and check 165°F (74°C) in the thickest part without touching the bone.
  • Rest cooked chicken 5 minutes before serving to keep the coating crisp and let juices redistribute.

Variations

  • Herb-Forward Crust: Add 1 teaspoon dried thyme or oregano to the flour mixture for an herbier coating.
  • Gluten-Free Buttermilk Fried Chicken: Use a 1:1 gluten-free flour blend in place of the all-purpose flour and keep the starch in the coating.
