Air Fryer Apple Fritters
What I like about this air fryer method is that the fritters set quickly and brown well without deep frying, but only if the batter stays thick, the apples are not too wet, and the basket is not crowded. I rely more on the look and feel than the clock here because small drop batters can cook differently from one air fryer to another.
These are drop-style apple fritters with crisp edges, a tender chewy middle, and plenty of diced apple in each bite. Blended cottage cheese gives the batter structure without making it heavy, parchment keeps the fritters from sticking, and a quick powdered sugar glaze finishes them with very little extra work.

Ingredients for Air Fryer Apple Fritters

- 2 medium Honeycrisp apples, diced 1/4-inch (about 12 ounces/340g)
- 1/3 cup packed light brown sugar (about 65g)
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 cups all-purpose flour (about 190g)
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 1 large egg
- 3/4 cup blended cottage cheese, smooth, preferably 2% or 4% (about 170g)
- 1/4 to 1/3 cup unsweetened almond milk, plus more as needed
- Neutral oil spray, such as avocado or canola
- 1 cup powdered sugar (about 120g)
- 2 to 3 tablespoons milk, almond or dairy, for the glaze
Optional: 1 teaspoon vanilla extract for the batter or glaze, 1/8 teaspoon nutmeg with the dry ingredients, or 1 tablespoon cornstarch tossed with extra-juicy apples.
Spice note: In a recipe like this, the cinnamon does a lot of the work, so it helps to use one you really like. If you want a warmer baking-spice profile, Selefina is a good source for cassia cinnamon or fresh ground nutmeg.
Honeycrisp works especially well because it stays fairly crisp and flavorful in the air fryer. Pink Lady, Braeburn, or Granny Smith also work. If your apples are very juicy, pat them dry after dicing so the batter stays thick enough to scoop.
How to Make Air Fryer Apple Fritters

- Prep the apples: Dice the apples into 1/4-inch pieces. Peel them if you prefer. If they seem especially juicy, pat them dry well so they do not loosen the batter.
- Blend the cottage cheese: Use an immersion blender or small blender to blend the cottage cheese until completely smooth, with no visible curds.
- Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Add the nutmeg here if using.
- Mix the wet ingredients: In a second bowl, whisk the egg, blended cottage cheese, brown sugar, and 1/4 cup almond milk until smooth and thick. Add vanilla here if using.
- Make the batter: Stir the dry ingredients into the wet ingredients just until combined. Fold in the diced apples. The batter should be thick and scoopable, not pourable. If it looks too stiff or clumpy, add a small splash more almond milk.
- Preheat the air fryer: Preheat to 370°F (188°C) for 3 to 5 minutes. While it heats, trim a piece of perforated parchment to fit your basket or tray.
- Portion the fritters: Place the parchment in the basket only when you are ready to add food. Lightly mist it with oil. Scoop about 2 tablespoons of batter per fritter onto the parchment, leaving at least 1/2 inch between them. Gently flatten each one to about 1/2 inch thick, then mist the tops lightly with oil.
- Cook the first side: Air fry at 370°F (188°C) for 5 to 6 minutes, until the edges look set and lightly golden. Work in batches of 4 to 6 fritters so they crisp instead of steam.
- Flip and finish: Carefully flip each fritter with a thin spatula and tongs. Mist again lightly with oil. Cook for 3 to 5 minutes more, until both sides are deep golden brown and the centers feel set when pressed. A toothpick should not come out with wet batter. If your air fryer browns quickly, reduce the temperature to 360°F (182°C) after flipping.
- Cool briefly: Transfer the fritters to a rack and repeat with the remaining batter. Let them cool for about 5 minutes before glazing so steam can escape.
- Glaze: Whisk the powdered sugar with 2 tablespoons milk until you have a thick drizzle. Add the last tablespoon only if needed. Dip the tops or drizzle over the warm fritters, then let the glaze set on the rack.
You should get about 10 to 12 fritters, depending on how generously you scoop them.
Air Fryer Time and Temperature for Apple Fritters
Use 370°F (188°C) for the main cook. In most air fryers, the fritters take 8 to 11 minutes total, flipping once halfway through.
Start checking as soon as the first side looks set. I usually look for browned edges first, then check that the center feels springy rather than soft. Because air fryers vary, color and structure are more reliable than exact timing here.
Parchment and Browning Tips
Use perforated parchment or trim it to fit so air can still move around the fritters. Add it only when the batter is already on it or when the food will immediately hold it down. Do not preheat with loose parchment in the basket, since it can lift toward the heating element.
A silicone liner with holes can also work, but I find the fritters usually brown a little more slowly on silicone than on parchment.
Troubleshooting Air Fryer Apple Fritters
Brown outside, raw inside
This usually means the fritters are too thick or your air fryer runs hot. Flatten them a little more on the next batch, lower the heat to 360°F (182°C) after flipping if needed, and cook until a toothpick comes out without wet batter.
Batter feels too stiff
Add another tablespoon of almond milk. You want a thick drop batter, but it still needs enough moisture to spread slightly and cook through evenly.
Fritters look pale
Make sure the air fryer is fully preheated, and do not skip the light oil mist on top before cooking and again after flipping.
Fritters turn soft after glazing
Some softening is normal. Let them cool for a few minutes first and keep the glaze thick so it sits on top instead of soaking in.
Variations
Healthy-leaning apple fritters
Reduce the brown sugar to 1/4 cup, skip the glaze or use less of it, and replace up to 1/2 cup of the all-purpose flour with whole-wheat pastry flour. Use 2% cottage cheese. The fritters will be a little less sweet and slightly denser, so mix just until combined.
Vegan apple fritters
Replace the egg with a flax egg made from 1 tablespoon ground flax and 3 tablespoons water, rested for 5 minutes. Replace the cottage cheese with 3/4 cup thick dairy-free yogurt or blended silken tofu. The batter may be a little looser, so add a spoonful of flour if needed and check doneness carefully.
Serving Air Fryer Apple Fritters
Serve these warm with coffee or tea. They also work well for brunch with vanilla yogurt on the side.
If you want a sweeter finish, add a little extra cinnamon, a dusting of powdered sugar, or a small drizzle of warm caramel.
For a make-ahead brunch dessert, the Air Fryer Cheesecake pairs well alongside them.
How to Store and Reheat Air Fryer Apple Fritters
Let the fritters cool completely before storing so condensation does not soften them further. Keep them at room temperature in a vented container for up to 1 day, or refrigerate for up to 3 days.
For longer storage, freeze them in a single layer first, then transfer to a freezer bag for up to 2 months.
To reheat, air fry room-temperature or chilled fritters at 320°F (160°C) for 2 to 4 minutes, until warmed through and lightly re-crisped. From frozen, reheat at 300°F to 320°F (149°C to 160°C) for 6 to 8 minutes and check early.
They will be a little softer than fresh, especially if already glazed, so for the best texture, glaze after reheating.
