Crispy Air Fryer Buffalo Chicken Wings with Classic Sauce

Air Fryer Buffalo Chicken Wings

I rely on the look and feel of the wings more than the clock here. When the skin is deep golden and blistered and the wings feel lighter when you lift them with tongs, you’re usually in the right range, even though air fryers and wing sizes vary.

What I like about this method is that it keeps the process simple: a light baking powder and salt dry-brine for better crisping, a hot preheated basket, and a classic Buffalo sauce made with melted butter and Louisiana-style hot sauce. You get that bar-style wing texture without deep frying, and the optional uncovered fridge rest helps even more if you want drier, crispier skin.

Ingredients for Air Fryer Buffalo Chicken Wings

Close-up of saucy Air Fryer Buffalo chicken wings with glossy butter-hot sauce and crisp, blistered skin on a neutral plate.
  • 2 pounds chicken wings, party cut (drumettes and flats) (about 900g)
  • 1 tablespoon aluminum-free baking powder
  • 1 1/4 teaspoons kosher salt
  • 1 to 2 teaspoons neutral oil or oil spray, such as avocado or canola, as needed
  • 4 tablespoons unsalted butter
  • 1/2 cup Frank’s RedHot Original or another Louisiana-style hot sauce (about 120g)

Spice note: For a simple dry-brine like this, fine spices from Selefina work well because they coat the wings evenly instead of sitting in clumps on the skin.

Optional for the dry mix: 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, or 1/2 teaspoon smoked paprika.

Optional for the sauce: 1 to 2 teaspoons honey or brown sugar for a slightly sweeter finish, or 1/2 teaspoon Worcestershire sauce for extra depth.

For serving: blue cheese dressing and celery sticks.

Use aluminum-free baking powder and keep the coating light. Too much can leave an off taste, and baking soda is not a substitute.

If you use fine sea salt or table salt instead of kosher salt, reduce it to about 3/4 to 1 teaspoon.

How to Make Buffalo Chicken Wings in the Air Fryer

Cooked Air Fryer Buffalo chicken wings in the basket, deep golden and blistered, unsauced and ready to toss.
  1. Dry the wings well: Pat the wings very dry with paper towels and trim any loose skin. If you’re starting with whole wings, cut them into drumettes and flats first. The drier the skin is before seasoning, the better it will crisp instead of steam.
  2. Season and dry-brine: In a large bowl, toss the wings with the baking powder, kosher salt, and any optional dry spices until they have a light, even coating with no clumps. Let them sit 15 to 30 minutes at room temperature, or set them on a rack and refrigerate uncovered for up to 24 hours for drier skin and better browning.
  3. Preheat the air fryer: Preheat to 400°F (200°C) for 5 minutes, unless your model has a strong auto-preheat cycle. Lightly oil the basket or tray, then lightly spray or brush the tops of the wings with oil. Use just enough to help with browning and sticking, not enough to pool.
  4. Cook the first side: Arrange the wings in a single layer with space between them. Do not stack. Air-fry at 400°F (200°C) for 10 to 12 minutes, until the undersides are starting to brown and the edges look a little crisp. Cook in batches if needed.
  5. Flip and finish: Flip the wings and rotate the basket or tray if your air fryer tends to brown unevenly. Continue cooking at 400°F (200°C) for 8 to 12 minutes more. Start checking around 16 minutes total. They’re done when the skin is deep golden and blistered, the fat has rendered, and the thickest pieces reach at least 165°F (74°C). For wings, I usually look for 185°F to 195°F (85°C to 90°C) when possible because the meat is more tender and the skin is better rendered.
  6. Make the Buffalo sauce: While the wings cook, melt the butter gently in a small saucepan or microwave-safe bowl. Whisk in the hot sauce until smooth. If you want, whisk in the honey, brown sugar, or Worcestershire sauce. Keep the sauce warm so it coats the wings in a thin, even layer.
  7. Toss after cooking: Transfer the hot wings to a clean bowl and toss with the sauce just until coated. Don’t sauce them in the air fryer basket. If you want to keep them crisper, use a lighter coating or sauce only part of the batch.
  8. Serve right away: Serve immediately with blue cheese dressing and celery sticks. If you’re cooking multiple batches, wipe out excess rendered fat from the drawer or basket between rounds to reduce smoke.

Air Fryer Time and Temperature for Buffalo Wings

Cook the wings at 400°F (200°C) for a total of 18 to 24 minutes, flipping halfway through. Start checking early if your air fryer runs hot.

The part I pay attention to is the skin. It should look well browned and blistered, not pale or rubbery. Use the internal temperature as the final check, with 165°F (74°C) as the minimum and 185°F to 195°F (85°C to 90°C) as the range where wings usually eat better.

Basket-style air fryers often run hotter and may finish faster than oven-style units. Wing size changes the timing too, so add a few minutes if needed rather than forcing an exact cook time.

Why Baking Powder Helps Air Fryer Wings Crisp

Baking powder helps the skin dry out and brown more effectively in the air fryer. That matters with wings, because surface moisture is what keeps the skin from crisping.

The key is a thin coating, not a heavy one. I’d rather keep the seasoning simple here because the Buffalo sauce brings plenty of flavor later, and too much powder or too many spices can get in the way of the texture.

Why Buffalo Wings Sometimes Turn Out Less Crispy

  • The wings were too wet: Pat them very dry before seasoning so they brown instead of steam.
  • The basket was crowded: Keep them in a single layer so the hot air can circulate around each piece.
  • Too much baking powder was used: A light, even coating is enough. More does not make them crispier.
  • They were sauced too early: Sauce always softens the skin, so toss only after cooking.
  • Rendered fat built up between batches: Wipe out the basket or drawer as needed to cut down on smoke and greasy splatter.

This is where the texture can go wrong: once the sauce goes on, the crust starts softening. Warm sauce helps because it coats more lightly, and serving the wings right away makes a noticeable difference.

Air Fryer Buffalo Wing Variations

Overnight Dry-Brined Wings

After tossing the wings with baking powder and salt, set them on a wire rack and refrigerate uncovered for 8 to 24 hours. This gives the surface more time to dry, which can improve browning and crispness. Don’t add extra salt for the overnight rest.

Buffalo Wings from Frozen Raw Wings

Cook frozen raw wings at 360°F (182°C) for 10 minutes to thaw and loosen them. Separate the pieces, blot away moisture, then toss with the baking powder and salt.

Finish cooking at 380°F to 400°F (193°C to 200°C) for 18 to 25 minutes more, flipping halfway, until the skin is browned and the thickest parts reach at least 165°F (74°C). Expect to use the longer end of the range because frozen wings release extra moisture.

How to Store and Reheat Air Fryer Buffalo Chicken Wings

Let the wings cool completely, then refrigerate them in an airtight container for 3 to 4 days. For the best texture, store them unsauced if you can and add the Buffalo sauce after reheating.

To reheat, air-fry at 350°F to 380°F (175°C to 193°C) for 5 to 8 minutes, until hot and re-crisped. If the wings are already sauced, stay on the lower end of that range so they don’t dry out. You can toss them with a little more warm sauce before serving.

You can freeze the wings for up to 2 months. Thaw them in the refrigerator before reheating for the best texture. They won’t be quite as crisp as freshly cooked wings, especially once sauced, but the air fryer brings them back better than the microwave.
