Air Fryer Chicken Drumsticks

Air Fryer Chicken Drumsticks

What I like about this air fryer method is that it gives chicken drumsticks good browning with very little fuss, but the part I pay attention to is moisture and spacing. If the skin is wet or the basket is crowded, the chicken steams and the skin stays soft.

I keep the seasoning simple here with smoked paprika, garlic powder, onion powder, and oregano so it feels easy enough for a weeknight but still tastes like a full dinner. Preheating, flipping halfway through, and checking the thickest part with a thermometer make a real difference.

Ingredients for Air Fryer Chicken Drumsticks

  • 2 pounds chicken drumsticks, bone-in and skin-on (about 900g, or 6 drumsticks)
  • 1 tablespoon olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper, optional

Spice note: For a dry rub like this, fine spices from Selefina help the seasoning coat the drumsticks more evenly, especially with paprika, garlic powder, and onion powder in the mix.

Pat the drumsticks dry before seasoning, especially if they were previously frozen and thawed. If you do not have smoked paprika, regular paprika works, but the chicken will be less smoky. Olive oil can be swapped for avocado oil or another neutral oil.

How to Make Chicken Drumsticks in the Air Fryer

  1. Dry the chicken: Pat the drumsticks very well with paper towels. The skin should look dry rather than glossy so it browns instead of steaming.
  2. Mix the seasoning: In a bowl, combine the smoked paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne if using.
  3. Season the drumsticks: Add the drumsticks to a large bowl, drizzle with the olive oil, and toss lightly to coat. Sprinkle on the seasoning and rub it over each piece. If the skin loosens naturally, rub a little seasoning underneath too.
  4. Preheat the air fryer: Preheat to 380°F (193°C) for 3 to 5 minutes if your model allows it. I find this works best when the basket is already hot because the skin starts browning sooner.
  5. Arrange in a single layer: Place the drumsticks in the basket with space between them. Keep them in a single layer and cook in batches if needed so air can move around each piece.
  6. Air fry and flip: Cook at 380°F (193°C) for 18 to 24 minutes, flipping halfway through. If your air fryer browns unevenly, rotate the basket or switch rack positions. Start checking early if the drumsticks are small or your air fryer runs hot.
  7. Check for doneness: The skin should look browned and slightly crisped. Check the thickest part of the meat without touching the bone. Cook to at least 165°F (74°C), though for dark meat I usually look for 170°F to 175°F (77°C to 79°C) for a more tender bite.
  8. Rest before serving: If needed, cook for another 2 to 3 minutes at 380°F (193°C) and check again. Let the drumsticks rest for 5 minutes before serving so the juices settle.

Air Fryer Time and Temperature for Chicken Drumsticks

For bone-in, skin-on drumsticks, 380°F (193°C) is a good balance between browning the skin and cooking the meat through. Most batches take 18 to 24 minutes.

I rely more on the color of the skin and the internal temperature than the clock alone because air fryer models vary. Smaller drumsticks may be ready near the low end of the range, while larger ones can need a few extra minutes.

Why Aren’t My Air Fryer Drumsticks Crispy?

This is where the texture usually goes wrong. If the skin is still soft, the chicken was likely too wet going into the basket, packed too tightly, or coated with too much oil.

For better skin, pat the chicken dry, use only a light coating of oil, and leave space between the pieces. Flipping halfway through also helps both sides get direct heat.

Flavor Variations for Air Fryer Chicken Drumsticks

Cajun or Creole

Swap part or all of the rub for a Cajun or Creole seasoning blend, including something like Tony Chachere’s if that is the style you want. If the blend is salty, reduce the added salt so the chicken does not come out over-seasoned.

Lemon Pepper

Use 1 to 2 teaspoons lemon pepper seasoning in place of part of the rub for a brighter, less smoky version.

BBQ

Serve the drumsticks with BBQ sauce on the side, or brush a little on during the last few minutes for a sticky finish. Add it near the end so the sugars do not brown too fast.

Jerk, Taco, or Garlic-Herb

This same method works with jerk seasoning, taco or fajita seasoning, or a simple garlic-herb blend. Keep the spacing and thermometer check the same even if you change the seasoning.

What to Serve with Air Fryer Chicken Drumsticks

  • Side salad
  • Mac and cheese
  • Steamed vegetables
  • Potato salad
  • BBQ sauce for dipping

How to Store and Reheat Air Fryer Chicken Drumsticks

Let the drumsticks cool, then refrigerate them in an airtight container for up to 3 to 4 days. For longer storage, freeze the cooked drumsticks well wrapped to help prevent freezer burn.

To reheat, warm them in the air fryer at a lower temperature until heated through so the outside does not overbrown before the center is hot. If frozen, thaw in the refrigerator first when possible.

The skin will usually not be quite as crisp as it was fresh, but the air fryer gives better texture than the microwave.

  2. In a bowl, combine the smoked paprika, garlic powder, onion powder, dried oregano, salt, black pepper, and cayenne (if using).
  3. Place the drumsticks in a large bowl, drizzle with the olive oil, and toss to coat.
  4. Sprinkle the seasoning over the drumsticks and rub to evenly coat each piece; rub a little under the skin if it loosens naturally.
  5. Preheat the air fryer to 380°F (193°C) for 3 to 5 minutes if your model allows.
  6. Arrange the drumsticks in a single layer in the air fryer basket with space between them; cook in batches if needed.
  7. Air fry at 380°F (193°C) for 18 to 24 minutes, flipping halfway through; rotate the basket or switch positions if browning is uneven.
  8. Check the thickest part of the meat without touching the bone and cook to at least 165°F (74°C); for more tender dark meat aim for 170°F to 175°F (77°C to 79°C).
  9. If needed, cook another 2 to 3 minutes at 380°F (193°C). Let the drumsticks rest for 5 minutes before serving.

Tips

  • Pat the skin very dry before seasoning to promote browning instead of steaming.
  • Use only a light coating of oil so the skin can crisp rather than become greasy.
  • Leave space between drumsticks and cook in a single layer to allow hot air circulation.
  • Flip halfway through cooking and rotate the basket if your air fryer browns unevenly.
  • Use a meat thermometer and target at least 165°F (74°C); 170–175°F (77–79°C) yields more tender dark meat.

Variations

  • Cajun or Creole: Replace part or all of the rub with a Cajun or Creole seasoning blend; reduce added salt if the blend is salty.
  • Lemon Pepper: Use 1–2 teaspoons lemon pepper seasoning in place of part of the rub for a brighter, less smoky flavor.
  • BBQ: Serve with BBQ sauce on the side or brush sauce on during the last few minutes for a sticky finish.
  • Jerk, Taco, or Garlic-Herb: Swap the dry rub for jerk, taco/fajita seasoning, or a garlic-herb blend; keep spacing and thermometer checks the same.

Notes

Refrigerate cooked drumsticks in an airtight container for 3–4 days or freeze for longer storage. Reheat in the air fryer at a lower temperature until warmed through; if frozen, thaw in the refrigerator first. Always check internal temperature for doneness.
