Crispy Air Fryer Mini Potatoes, No Parboiling Needed

Air Fryer Mini Potatoes

I rely on the visual cue more than the clock with mini potatoes. They are done when the edges look browned, the skins are lightly blistered, and a fork or skewer slides in easily. Air fryer models vary, and baby potatoes can be surprisingly different in size, so that matters more than one exact minute mark.

What I like about this air fryer method is that there is no parboiling step. Dry the potatoes well, give them a light coating of oil and spices, and keep them in a single layer so the outsides crisp while the centers stay creamy.

Ingredients for Air Fryer Mini Potatoes

  • 1 1/2 pounds baby potatoes, preferably Yukon Gold or yellow (about 675g)
  • 1 to 1 1/2 tablespoons olive oil
  • 1 teaspoon sweet Hungarian paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 3/4 to 1 teaspoon kosher salt, to taste
  • 1/2 teaspoon black pepper

Spice note: For a potato seasoning like this, fine spices from Selefina work well because the paprika, garlic powder, and other dry spices coat the potatoes evenly instead of falling to the bottom of the bowl.

Yellow baby potatoes give the creamiest interior, but red or tri-color baby potatoes work too. If the potatoes vary a lot in size, halve the larger ones so most pieces are close to 1 inch.

Optional for finishing: chopped parsley or chives, grated Parmesan, or lemon wedges on the side.

How to Make Air Fryer Mini Potatoes

Air Fryer Mini Potatoes in a black air fryer basket, golden-browned with paprika and crisp, blistered skins, ready to serve.
  1. Preheat the air fryer: Preheat to 400°F (200°C) for 3 to 5 minutes, or let your machine finish its auto-preheat cycle. Starting with a hot basket helps the potatoes begin browning right away.
  2. Wash, dry, and cut: Rinse the potatoes well, then dry them thoroughly with a clean kitchen towel or paper towels. This is where the texture can go wrong; damp potatoes steam instead of crisp. Halve any larger potatoes so most pieces are around 1 inch.
  3. Season the potatoes: In a large bowl, toss the potatoes with the olive oil, paprika, garlic powder, onion powder, cumin, cayenne, kosher salt, and black pepper. The potatoes should look lightly coated and glossy, not oily.
  4. Arrange in the basket: Spread the potatoes in a single layer with a little space between the pieces. Do not stack them. If needed, cook in batches so the hot air can circulate properly.
  5. Air fry until browned and tender: Cook at 400°F (200°C), shaking the basket or turning the potatoes halfway through. Halved 1-inch potatoes usually take 12 to 16 minutes. Whole 1- to 1 1/4-inch baby potatoes usually take 18 to 22 minutes. In an oven-style air fryer, rotate the trays halfway through as well.
  6. Check for doneness: Start checking a few minutes early if your air fryer runs hot. The potatoes are done when the skins are browned and lightly blistered, the edges are crisp, and the centers are fork-tender. They should taste creamy inside, not chalky.
  7. Finish and serve: Taste and add another pinch of salt if needed. If using Parmesan, toss it with the potatoes during the last 1 to 2 minutes of cooking so it melts and clings. Finish with herbs or a squeeze of lemon, if you like, and serve hot.

Air Fryer Time and Temperature for Mini Potatoes

Use 400°F (200°C) as the baseline temperature. It gives good browning without making the spice blend too dark too quickly.

  • Halved mini potatoes, about 1 inch: 12 to 16 minutes
  • Whole mini potatoes, about 1 to 1 1/4 inches: 18 to 22 minutes

I usually look for color and tenderness before I add more time. If the potatoes are browned but still a little firm in the middle, give them another 1 to 3 minutes.

How to Get Crispy Air Fryer Mini Potatoes

The part I pay attention to most is surface moisture. After washing, the potatoes need to be very dry before the oil and seasoning go on, otherwise the skins soften and the basket traps steam instead of building color.

Use just enough oil to coat them lightly. For 1 1/2 pounds, 1 to 1 1/2 tablespoons is enough. Too much oil can leave the potatoes greasy and may cause smoking in some air fryers.

Best Potatoes for This Recipe

Baby Yukon Gold or other yellow potatoes are my first choice here because they brown well and stay creamy inside. Red baby potatoes also work, and tri-color bags are fine if the sizes are fairly even.

Even sizing matters more than the exact variety. If some potatoes are much larger than others, cut the large ones in half and leave the smaller ones whole so the batch finishes at the same time.

Why Air Fryer Mini Potatoes Turn Soggy or Pale

  • Soggy potatoes: They were likely still damp, too crowded, or just needed a little more time. Dry them better, reduce the load in the basket, and add 1 to 2 more minutes if needed.
  • Pale potatoes: Make sure the air fryer was preheated and that the potatoes were lightly coated with oil. Add 1 to 3 more minutes for more color.
  • Dark edges with firm centers: The potatoes may be larger than they look. Lower the temperature to 380°F (193°C) and cook a little longer until the centers soften.

What to Serve with Air Fryer Mini Potatoes

These potatoes work well alongside roasted chicken, steak, grilled meats, or salmon. They also make a good brunch side with fried eggs or soft-scrambled eggs.

For finishing, I like them plain with a little extra salt, or with chopped parsley or chives and lemon on the side. Aioli, ranch, or ketchup all work if you want a dip.

How to Store and Reheat Air Fryer Mini Potatoes

Cool the potatoes completely, then refrigerate them in an airtight container for up to 4 days. I would not freeze them here; the texture tends to turn mealy after thawing.

To reheat, air fry at 375°F (190°C) for 4 to 6 minutes, shaking once halfway through. If they look dry, a very light mist of oil helps them re-crisp.

Leftovers will not be quite as crisp as a fresh batch, but they reheat well. If you are cooking in batches for serving, keep the first batch on a sheet pan in a 200°F (93°C) oven while the rest finish.

  8. Taste and add more salt if needed, finish with chopped herbs or a squeeze of lemon, and serve hot.

Tips

  • Dry potatoes thoroughly after washing to prevent steaming and soggy skins.
  • Keep potatoes in a single layer and avoid overcrowding so hot air can circulate.
  • Cut larger potatoes to match the size of smaller ones for even cooking.
  • Use just enough oil (about 1 to 1 1/2 tablespoons for 1 1/2 lb) to coat potatoes lightly and avoid greasiness.
  • Start checking a few minutes early if your air fryer runs hot and add short increments of time as needed.

Variations

  • Herby rosemary version: Add chopped fresh rosemary or use a rosemary-based seasoning for a herby flavor (see Crispy Air Fryer Baby Potatoes with Rosemary).
  • Parmesan finish: Toss grated Parmesan with the potatoes during the last 1 to 2 minutes of cooking so it melts and clings for a cheesy finish.

Notes

Cool completely before refrigerating in an airtight container for up to 4 days; do not freeze. Reheat in the air fryer at 375°F (190°C) for 4 to 6 minutes, shaking once, and mist lightly with oil if dry.
