Air Fryer Taco Egg Rolls with Beef, Cheese & Salsa

Air Fryer Taco Egg Rolls

What I like about this air fryer method is that the wrappers crisp nicely with just a light oil spray, but the part I pay attention to most is the filling. If it goes into the wrapper too wet or too hot, the egg rolls are much more likely to soften, split, or leak in the basket.

This version keeps the filling straightforward with taco-seasoned ground beef, onion, pepper, salsa, and shredded cheese, then air fries the rolls until deep golden and blistered. It works well as a party snack or game-day appetizer, and the no-preheat approach keeps it simple for most basket-style air fryers.

Ingredients for Air Fryer Taco Egg Rolls

Cut-open Air Fryer Taco Egg Roll showing melted cheese, taco beef, and peppers in a crisp shell.
  • 12 egg roll wrappers
  • 1 lb ground beef, 85 to 90% lean (450g)
  • 1 packet taco seasoning (about 2 to 3 tablespoons), or about 1 to 2 teaspoons mild chili powder if you’re making a quick DIY mix
  • 1/4 to 1/2 cup water, as directed on the seasoning packet
  • 1 cup finely diced onion (150g)
  • 1 medium poblano pepper or 1 to 2 jalapeños, finely diced (60g)
  • 2 to 3 cloves garlic, minced (9g), or 1/2 teaspoon garlic powder
  • 1/2 cup thick salsa, drained if watery (120g)
  • 1 1/2 cups shredded Mexican-style cheese blend (170g)
  • Neutral oil spray, as needed
  • Small bowl of water or a cornstarch slurry made from 1 teaspoon cornstarch and 1 tablespoon water, for sealing
  • Kosher salt and black pepper, to taste

Ingredient note: For this kind of filling, a mild Selefina chili powder works best when you want taco flavor without making the egg rolls too spicy, and garlic powder is useful if you want the seasoning to blend in smoothly without extra moisture.

How to Make Taco Egg Rolls in the Air Fryer

Air Fryer Taco Egg Rolls in basket, seam-side down, golden with small blisters.
  1. Cook the beef and vegetables: In a 12-inch skillet over medium-high heat, cook the ground beef, breaking it up as it browns. Add the onion, poblano or jalapeño, and garlic, and cook until the vegetables soften and the beef is fully cooked to 160°F (71°C).
  2. Season and reduce: Stir in the taco seasoning and the amount of water called for on the packet, using the lower end if you want a drier filling. Simmer until most of the liquid has cooked off and there is no visible pooling in the pan.
  3. Stir in the salsa and cool: Remove the skillet from the heat and stir in the salsa. Taste and adjust with salt and pepper if needed, then spread the filling on a plate or shallow dish and let it cool for 5 to 10 minutes, until it feels thick rather than loose and most of the steam has released.
  4. Set up for rolling: Lightly oil the air fryer basket or line it with air fryer-safe perforated parchment. Keep the wrappers under a damp towel so they stay pliable, and set out the cooled filling, shredded cheese, and your water or cornstarch slurry.
  5. Fill and roll: Place one wrapper in front of you like a diamond. Spoon about 3 tablespoons of filling onto the lower third, top with 1 to 2 tablespoons of cheese, then fold the bottom corner over the filling, tuck in the sides, and roll tightly. Brush the top corner with water or slurry to seal. Keep the edges clean and do not overfill, since that is the main reason egg rolls burst.
  6. Arrange in the basket: Place the egg rolls seam-side down in a single layer with a little space between them. Lightly spray the tops with neutral oil.
  7. Air fry: Cook at 375°F (190°C) for 8 to 12 minutes, flipping at 5 to 6 minutes. If you see dry flour spots after flipping, give them another light spray. I rely more on the wrapper than the clock here: they are ready when the shells are deep golden with small blisters, the cheese is melted, and the wrappers sound crisp when tapped.
  8. Cook in batches: Repeat with the remaining egg rolls. Later batches often cook 1 to 2 minutes faster because the air fryer is already hot, so start checking a little early.
  9. Rest and serve: Let the egg rolls sit for 2 minutes before serving so the cheese can set slightly and the steam can settle inside.

Air Fryer Time and Temperature for Taco Egg Rolls

Cook the egg rolls at 375°F (190°C) for about 8 to 12 minutes total, flipping halfway through. Start checking around the 8-minute mark if your air fryer runs hot or preheats automatically.

For most basket-style air fryers, I do not find preheating necessary here. Oven-style units can brown a little differently, so use color and crispness as your final cue rather than one exact minute mark.

How to Keep Taco Egg Rolls Crispy Instead of Soggy

This is where the texture usually goes wrong. Simmer the seasoned beef until the extra liquid is gone, use thick salsa or drain it if needed, and cool the filling before rolling.

When you assemble, keep the wrapper edges clean and seal them well. Too much filling makes the rolls harder to close and much more likely to leak or burst.

Best Cheese and Salsa for Taco Egg Rolls

Shredded Mexican-style cheese blend is the easiest choice because it melts evenly and helps hold the filling together. Cheddar, Monterey Jack, or Pepper Jack also work well.

I would skip high-moisture fresh cheeses here since they can loosen the filling and make leaks more likely. For salsa, use a thick restaurant-style salsa or drain a looser one so the wrappers crisp instead of steaming from the inside.

Air Fryer Taco Egg Roll Variations

Ground Beef Classic

For the driest, easiest-to-roll version, use the ground beef, onion, jalapeño, taco seasoning, and cheese, and skip the salsa. If you want a little binder, stir 2 tablespoons softened cream cheese into the warm filling off the heat before cooling it.

Turkey or Chicken Taco Egg Rolls

You can swap the beef for 1 pound of ground turkey or chicken and reduce the cheese to 1 cup. Cook poultry to 165°F (74°C) in the skillet, and make sure the filling reduces well before you roll the wrappers.

Serving Taco Egg Rolls

Serve these hot with salsa, guacamole, sour cream, or warm queso. Chopped cilantro and a squeeze of lime are also good at the table.

If you want to turn them into more of a meal, pair them with Air Fryer Enchiladas with Beef and Cheese for a bigger Tex-Mex spread, or balance the richness with Air Fryer Spaghetti Squash.

How to Store and Reheat Air Fryer Taco Egg Rolls

Let the egg rolls cool completely, then refrigerate them in an airtight container for up to 3 days. If you need to stack them, place parchment between layers so the wrappers do not stick and soften as much.

To reheat, air fry at 350°F (175°C) for 3 to 5 minutes, flipping once. A light spray of oil helps bring back some crunch. They will not be quite as crisp as fresh, but the wrappers should firm up well.

For make-ahead prep, freeze the unbaked egg rolls on a sheet pan until firm, then transfer them to a freezer-safe container or bag for up to 2 months. Air fry from frozen at 360 to 370°F (182 to 188°C) for 10 to 14 minutes, flipping once, until golden and heated through.

  • Cool the filling 5–10 minutes before rolling to reduce steam and leaks.
  • Keep wrapper edges clean and avoid overfilling to prevent bursting.
  • Lightly spray oil on the tops and respray after flipping if dry spots appear.

Variations

  • Ground Beef Classic: Omit the salsa for a drier filling; optionally stir 2 tablespoons softened cream cheese into warm filling off the heat for a binder.
  • Turkey or Chicken Taco Egg Rolls: Swap beef for 1 lb ground turkey or chicken and reduce cheese to 1 cup; cook poultry to 165°F (74°C) and ensure the filling reduces well before rolling.
