Teriyaki Salmon Air Fryer

What I like about this air fryer method is that the salmon cooks fast, but the part I pay attention to is the glaze timing. Sugary sauces can darken quickly in an air fryer, so I’d rather cook the fish most of the way first and brush on the thickened teriyaki glaze at the end.

This version is built for a weeknight: a short marinade, a separate reserved sauce for safe glazing, and a single layer cook so the salmon browns lightly instead of steaming. Serve it with rice and vegetables, and finish with scallions or furikake if you want a little extra texture.

Ingredients for Air Fryer Teriyaki Salmon

Close-up of air fryer teriyaki salmon flaking apart, showing a moist center with glossy teriyaki glaze and furikake.
  • 4 salmon fillets, 5 to 6 ounces each (about 1 1/2 pounds total or 675g), skin-on or skinless
  • 1/3 cup low-sodium soy sauce
  • 3 tablespoons packed brown sugar (or 3 tablespoons granulated brown sugar)
  • 1 1/2 tablespoons unseasoned rice vinegar
  • 3 tablespoons water, plus 2 teaspoons more if needed for the slurry
  • 2 garlic cloves, minced
  • 2 teaspoons cornstarch
  • 1 teaspoon neutral oil, or cooking spray for the basket or liner

Optional: 1 to 2 teaspoons sriracha or sambal oelek for heat, 1 teaspoon finely grated ginger or 1/4 teaspoon ground ginger, 1/2 teaspoon toasted sesame oil stirred into the finished glaze, 1 to 2 teaspoons furikake, and 2 tablespoons sliced scallions.

Ingredient note: Center-cut fillets around 1 to 1 1/4 inches thick cook most evenly. Skin-on salmon is also easier to move in and out of the basket; if using it, cook the fillets skin-side down the whole time.

Spice note: In a quick teriyaki sauce like this, ginger can change the flavor more than you might expect. If you want to test a fresh vs. dry ginger version, small pantry options from Selefina make that easy without changing the rest of the recipe.

How to Make Teriyaki Salmon in the Air Fryer

Glazed air fryer teriyaki salmon fillets in a black basket, lightly browned with a set, glossy glaze.
  1. Make the sauce base: In a bowl, whisk together the soy sauce, brown sugar, rice vinegar, 3 tablespoons water, and garlic until the sugar is mostly dissolved. If using ginger or a spicy add-in, whisk it in now. Pour about 1/3 cup into a small saucepan and set it aside for the glaze.
  2. Marinate the salmon briefly: Pat the salmon dry, then add it to the remaining sauce in the bowl or transfer both to a zip-top bag. Refrigerate for 15 to 30 minutes. I keep the marinade short here so the fish does not get too salty.
  3. Preheat the air fryer: Preheat to 380°F (193°C) for 3 minutes. A short preheat gives you more predictable timing and helps the salmon start browning sooner. If you use perforated parchment or a silicone liner, add it after preheating.
  4. Prepare the basket: Lightly oil the basket or liner. Lift the salmon from the marinade and let the excess drip off well so you do not get too much sauce pooling underneath.
  5. Arrange in a single layer: Place the fillets in the basket with a little space between them, skin-side down if using skin-on salmon. Do not overlap. Cook in batches if needed so the fish browns instead of steaming.
  6. Air-fry the salmon: Cook at 380°F (193°C) for 6 to 8 minutes, until the salmon is nearly done. No flip is needed. If your air fryer has hot spots, rotate the basket once. Start checking around 7 minutes for fillets about 1 to 1 1/4 inches thick; the edges should look opaque, with the center still slightly translucent.
  7. Thicken the reserved sauce: While the salmon cooks, whisk the cornstarch with 2 teaspoons water to make a slurry. Bring the reserved sauce to a simmer over medium heat, whisk in the slurry, and cook for 30 to 60 seconds until glossy and thick enough to coat a spoon. If using toasted sesame oil, stir it in off the heat.
  8. Glaze near the end: Brush the salmon lightly with the thickened glaze, then cook for 1 to 2 minutes more at 380°F (193°C) to set it. If the glaze starts darkening too quickly, pull the salmon out and brush it on after cooking instead.
  9. Check doneness and rest: The salmon is done when it flakes easily and looks opaque to your liking. USDA guidance for fish is 145°F (63°C), but many people prefer to pull salmon at 125 to 130°F (52 to 54°C) for a moister center. Rest for 2 minutes, then brush with a little more glaze and add scallions or furikake if you like.

Air Fryer Time and Temperature for Teriyaki Salmon

For teriyaki salmon, use 380°F (193°C). Fillets that are 1 to 1 1/4 inches thick usually take 8 to 10 minutes total, including the final 1 to 2 minutes after glazing.

I rely more on the visual cue than the clock here because air fryer models vary. Basket-style units often cook a little faster, while oven-style air fryers may need another minute or two.

Look for flesh that is mostly opaque, edges that are lightly browned, and a glaze that looks shiny and set. If you see a lot of white albumin on the surface, the salmon has usually gone a bit too far.

How to Keep Teriyaki Glaze from Burning in the Air Fryer

This is the main failure point in the recipe. Teriyaki sauce contains sugar, so if it goes on too early, it can scorch before the salmon finishes cooking.

  • Let excess marinade drip off before the salmon goes into the basket.
  • Use the reserved sauce for glazing, not the marinade that touched the raw fish.
  • Thicken the glaze on the stovetop first so it clings quickly.
  • Brush it on only during the last 1 to 2 minutes, or after cooking if your air fryer runs hot.

Safety note: do not use marinade that touched raw fish on the cooked salmon unless it is boiled for at least 1 minute.

Liners, Parchment, and Airflow

If you want easier cleanup, use perforated air fryer parchment or a silicone liner, but add it only after preheating. I find this works best when there is still open space around the fish for airflow.

A solid sheet without holes can slow browning. Lightly oil the liner to reduce sticking.

Easy Variations

Air Fryer Teriyaki Salmon Bites

Cut the salmon into 1-inch cubes and marinate for 10 to 15 minutes. Air-fry at 400°F (204°C) for 6 to 8 minutes, shaking once, then toss with the thickened glaze. This works well for rice bowls or appetizers, but the smaller pieces brown faster, so do not glaze them early.

Teriyaki Salmon with Skin-On Fillets

Cook skin-on fillets skin-side down the entire time. They are easier to handle in the basket, and you can slide a thin spatula between the flesh and skin after cooking if you do not want to serve the skin.

What to Serve with Teriyaki Salmon

Serve the salmon over steamed white or brown rice with extra glaze spooned over the top. It also pairs well with steamed broccoli, bok choy, or a quick cabbage stir-fry.

For a bowl-style dinner, add cucumber or seaweed salad and finish with furikake or scallions. For more topping ideas, see our Air Fryer Salmon Bowl.

How to Store and Reheat Air Fryer Teriyaki Salmon

Refrigerate leftover salmon in an airtight container for up to 2 days. Store any extra glaze separately and let it cool before refrigerating.

To reheat, warm the salmon in the air fryer at 300 to 320°F (149 to 160°C) for 3 to 4 minutes, just until heated through. Brush with a little extra glaze before reheating if you want to help with moisture.

You can also microwave it at 50% power in short bursts for gentler reheating. The glaze can be made 3 to 4 days ahead and rewarmed gently before serving.
