Air Fryer General Tso’s Tofu (Crispy, Saucy, Fast)

Air Fryer General Tso’s Tofu

The part I pay attention to with air fryer tofu is moisture. If the tofu is damp or crowded in the basket, the cornstarch coating turns pasty instead of crisp, so I’d rather spend a few minutes pressing and patting it dry before it ever goes near the air fryer.

This version keeps the tofu simple: oil, cornstarch, hot air, and enough space to brown. The sweet, tangy, spicy sauce cooks separately on the stove, then gets tossed with the tofu right before serving so the edges stay as crisp as possible.

Air Fryer General Tso’s Tofu at a Glance

  • Servings: 3 to 4
  • Prep time: 15 minutes, plus extra time if pressing tofu longer
  • Cook time: 15 to 18 minutes
  • Total time: 30 to 40 minutes
  • Air fryer temperature: 400°F (200°C)
  • Best tofu: extra-firm or super-firm

Ingredients for Air Fryer General Tso’s Tofu

For the tofu

  • 1 block extra-firm or super-firm tofu, 14 ounces (about 400g)
  • 3 tablespoons cornstarch (about 24g)
  • 1 to 2 teaspoons neutral oil, such as avocado, canola, or grapeseed, plus oil spray for the basket

For the General Tso’s sauce

  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons packed light brown sugar (about 25g)
  • 1 1/2 tablespoons rice vinegar
  • 1/3 cup water
  • 3 cloves garlic, minced, or 3/4 teaspoon garlic powder
  • 1 tablespoon fresh ginger, minced
  • 1/4 to 1/2 teaspoon red pepper flakes
  • 2 teaspoons cornstarch mixed with 2 teaspoons water, for the slurry

For serving

  • 1 to 2 teaspoons sesame seeds
  • 2 green onions, thinly sliced
  • Steamed white or brown rice, optional
  • Steamed or air-fried broccoli, green beans, or Brussels sprouts, optional

Optional additions

  • Toasted sesame oil: Stir in 1/2 teaspoon off heat right before tossing the tofu for a deeper sesame aroma.
  • Chili-garlic paste or sambal oelek: Add 1 to 2 teaspoons with the red pepper flakes for a spicier sauce. Reduce the flakes if you want more control over the heat.
  • Broccoli: Add 2 to 3 cups steamed or air-fried broccoli alongside the tofu, or toss it lightly in the sauce after the tofu is coated.

Spice rack note: For a sauce like this that leans on garlic, ginger, and chile heat, Selefina’s pinch jar spice rack offer is a practical way to keep red pepper flakes, garlic powder, and other sauce staples organized.

Tofu Choice and Prep for the Air Fryer

Extra-firm tofu benefits from pressing because removing surface moisture helps the cornstarch form a dry, light coating. Press it between towels with a weight for 10 to 20 minutes, then pat it very dry before cutting.

Super-firm tofu is the shortcut. It has less water to begin with, so a thorough pat dry is usually enough.

If you like a chewier, spongier texture, you can freeze and thaw the tofu first, then press out the extra moisture. It absorbs sauce well, but it still needs to be dry before coating or the cornstarch will clump.

How to Make General Tso’s Tofu in the Air Fryer

Air Fryer General Tso’s tofu cubes in basket, light golden, dry crisp edges, unsauced and ready to toss.
  1. Press and dry the tofu: Drain the tofu. If you are using extra-firm tofu, press it between paper towels with a weight for 10 to 20 minutes. If you are using super-firm tofu, pat it dry very well. The surface should look matte, not wet.
  2. Cut and coat: Cut the tofu into 1-inch cubes. Put it in a bowl, toss gently with 1 to 2 teaspoons neutral oil, then sprinkle the cornstarch over the top. Toss until the pieces have a thin, even coating with no damp or clumpy spots.
  3. Preheat the air fryer: Preheat to 400°F (200°C) for 3 to 5 minutes. Lightly spray or brush the basket with oil so the tofu releases more easily.
  4. Air fry the tofu: Arrange the tofu in a single layer with a little space between pieces. Cook in batches if needed. Air fry at 400°F (200°C) for 10 to 14 minutes, shaking or turning around 6 to 7 minutes. The tofu is ready when the edges are light golden to golden-brown, the surface feels dry and crisp, and the cubes release easily when turned.
  5. Make the sauce: While the tofu cooks, combine the soy sauce, hoisin, brown sugar, rice vinegar, water, garlic, ginger, and red pepper flakes in a small saucepan or skillet. Bring to a gentle simmer over medium heat and cook for 2 to 3 minutes, until the sugar dissolves and small bubbles form.
  6. Thicken the sauce: Stir together the 2 teaspoons cornstarch and 2 teaspoons water. Drizzle the slurry into the simmering sauce while stirring. Cook for 30 to 60 seconds, just until the sauce is glossy and thick enough to coat a spoon. Lower the heat if it starts bubbling too hard.
  7. Toss off heat: Take the sauce off the heat, then add just enough to coat the hot tofu and toss gently. I would not sauce the tofu in the air fryer basket. Keep any extra sauce for rice or vegetables.
  8. Finish and serve: Top with sesame seeds and green onions. Serve right away, ideally over rice with broccoli or another simple vegetable.

Air Fryer Time and Temperature for Tofu

Cook the tofu at 400°F (200°C) for 10 to 14 minutes. Start checking around 9 minutes if your air fryer runs hot.

I rely on the visual cue more than the clock here. You want dry, crisp edges and light golden browning. Basket-style air fryers often brown faster, while oven-style air fryers can take 2 to 3 extra minutes and may need tray rotation halfway through.

How to Get Crispy Tofu in the Air Fryer

  • Dry the tofu well: Excess moisture is the main reason the cornstarch turns gummy.
  • Use a light coating of oil: A small amount helps the surface brown without making the coating heavy.
  • Leave space between pieces: If the tofu is packed too tightly, it steams instead of crisping.
  • Sauce at the end: Tossing the tofu in the sticky sauce right before serving keeps the edges from softening too soon.
  • Use parchment carefully: If your air fryer manual allows a perforated parchment liner, add it only after preheating so airflow is not blocked.

General Tso’s Sauce Notes and Substitutions

The sauce lands sweet, salty, tangy, and lightly spicy, with enough body to cling to the tofu once the slurry goes in. Taste it before tossing with the tofu.

  • Tamari for soy sauce: This works well. If you need the dish to be gluten-free, use a gluten-free hoisin too.
  • Maple syrup or honey for brown sugar: Start with a little less, then adjust to taste since liquid sweeteners can read sweeter in the finished sauce.
  • White vinegar for rice vinegar: Use a small pinch of sugar with it and adjust carefully.
  • Arrowroot for cornstarch in the sauce: Use slightly less and avoid boiling the sauce hard once it thickens.
  • Oil choice: Stick with a high-smoke-point oil such as avocado, canola, or grapeseed for the tofu.

Why Isn’t My Air Fryer Tofu Crispy?

  • The tofu was too wet: Press it longer next time and pat it dry again before adding cornstarch.
  • The basket was crowded: Cook in batches so the hot air can reach all sides.
  • The tofu looks pale: Give it 1 to 2 more minutes at 400°F (200°C) and make sure the air fryer was preheated.
  • The tofu is sticking: Use a little more oil spray on the basket and wait until the cubes release more easily before turning.
  • The tofu softened after saucing: Use less sauce and toss closer to serving time, with extra sauce on the side.

Variations

Peanut Tofu

Use the same air fryer tofu method, then swap the General Tso’s sauce for a peanut sauce made with 3 tablespoons soy sauce, 2 to 3 tablespoons creamy peanut butter, 1 tablespoon rice vinegar, 1 to 2 tablespoons maple syrup or brown sugar, and 1 teaspoon chili-garlic paste if you want heat. Thin with 2 to 4 tablespoons water and simmer briefly. Keep it pourable and toss off heat.

General Tso’s Tofu from Frozen Cubes

If you have plain frozen tofu cubes, you can air fry them straight from frozen. Skip the cornstarch, since it will not adhere well to hard-frozen tofu. Toss lightly with oil and air fry at 400°F (200°C) for 14 to 18 minutes, shaking every 5 minutes, until the edges look dry and crisp.

The texture will be chewier and a little less crisp than fresh, pressed tofu. For a gentler, glossy glaze, see our Air Fryer Sweet Chili Tofu.

What to Serve with Air Fryer General Tso’s Tofu

  • Steamed white rice or brown rice
  • Steamed or air-fried broccoli
  • Green beans or Brussels sprouts
  • Extra green onions and sesame seeds
  • Potstickers or spring rolls on the side

How to Store and Reheat Air Fryer General Tso’s Tofu

Let leftovers cool completely before storing. For the best texture, refrigerate the tofu and sauce in separate airtight containers for 3 to 4 days.

To reheat unsauced tofu, air fry at 375°F (190°C) for 3 to 5 minutes, until the edges crisp back up. Warm the sauce separately on the stovetop or in the microwave. If it has thickened too much, add a small splash of water before serving.

If the tofu is already sauced, reheat it at 350°F (175°C) on parchment for 3 to 4 minutes. It will be softer than freshly cooked tofu, but the flavor still holds up well.
