Air Fryer Gochujang Tofu (Crispy with Sticky Glaze)

Air Fryer Gochujang Tofu

For crisp tofu with a sticky gochujang glaze, cook the tofu first and sauce it after. That keeps the cornstarch coating crisp and avoids burnt sugar in the basket.

This version is weeknight-friendly: press the tofu, air fry it with a light oil-and-starch coating, then toss it with a sweet-spicy sauce while it is still hot. Serve it over rice or noodles, or as a spicy tofu bite with green onions and sesame seeds.

Ingredients for Air Fryer Gochujang Tofu

  • 14 oz extra-firm tofu, pressed (about 400g) — extra-firm tofu holds its shape well and crisps better once dried out.
  • 2 teaspoons neutral oil — canola, avocado, or vegetable oil all work.
  • 2 tablespoons cornstarch (about 15g) — gives the tofu a thin crisp shell.
  • 2 tablespoons gochujang — use gluten-free gochujang if needed.
  • 1 1/2 tablespoons ketchup — adds tangy sweetness and helps the glaze cling.
  • 1 tablespoon soy sauce — or tamari for a gluten-free option.
  • 1 to 1 1/2 tablespoons maple syrup or agave — use the smaller amount if you want a less sweet glaze.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 to 2 tablespoons water — enough to make the sauce glossy and pourable.
  • 2 green onions, sliced — for garnish.
  • 1 teaspoon toasted sesame seeds — for garnish.

Optional Additions

  • Pinch of ground cinnamon — about 1/16 teaspoon, stirred into the sauce for a little warmth.
  • 1/2 teaspoon toasted sesame oil — stir into the sauce after thinning for a nuttier finish.

Spice note: In a quick sauce like this, fine-textured spices from Selefina mix in smoothly, so the garlic and onion powder season the glaze evenly instead of sitting in little clumps.

How to Make Air Fryer Gochujang Tofu

Air Fryer Gochujang Tofu in the basket, glossy red-coated cubes with light browning and a few sauce marks on the black drawer.
  1. Press the tofu: Press the tofu for 15 to 30 minutes, then pat it very dry. If you are using previously frozen and thawed tofu, squeeze out excess moisture and dry the outside well.
  2. Preheat the air fryer: Preheat to 390°F (200°C) for 3 to 5 minutes. If you use perforated parchment, add it after preheating so it does not lift into the heating element.
  3. Cut and coat: Cut the tofu into 3/4- to 1-inch cubes. Toss with the oil first, then sprinkle on the cornstarch and toss again until the coating looks light and even, without wet clumps or dry patches.
  4. Arrange in a single layer: Place the tofu in the basket with a little space between pieces. Cook in batches if needed so the tofu crisps instead of steaming.
  5. Air fry until crisp: Cook for 10 to 14 minutes, shaking or flipping at 6 to 7 minutes. The tofu is ready when the edges are golden brown and the surface looks dry and crisp rather than chalky.
  6. Make the sauce: While the tofu cooks, whisk together the gochujang, ketchup, soy sauce, maple syrup or agave, garlic powder, onion powder, optional cinnamon, and 1 tablespoon water. Add more water a little at a time until the sauce coats a spoon but still pours easily.
  7. Toss with the hot tofu: Transfer the cooked tofu to a clean bowl, add the sauce, and toss gently until the pieces are evenly coated and glossy.
  8. Optional quick set: If you want a tackier glaze, return the sauced tofu to the air fryer for 1 minute at 390°F (200°C). Watch closely, since the sugars in the sauce can darken fast.
  9. Garnish and serve: Finish with sliced green onions and toasted sesame seeds.

Air Fryer Time and Temperature for Gochujang Tofu

Cook the tofu at 390°F (200°C) for 10 to 14 minutes. Shake the basket or flip the tofu around the 6 to 7 minute mark so both sides brown evenly.

Start checking on the early side if your air fryer runs hot. Basket-style air fryers often brown faster than air fryer ovens, while oven-style models may need a few extra minutes.

Use the look of the tofu as your final cue: the coating should be dry and crisp, with browned edges. If it still looks pale or dusty, give it a little more time before saucing.

How to Keep Air Fryer Tofu Crispy Before Saucing

The main thing is moisture control. Pressed tofu crisps better because the cornstarch can cling to a dry surface instead of turning gummy.

Keep the coating light. For one 14 oz block, 2 tablespoons of cornstarch is enough to give you a crisp shell without a thick starchy crust. Oil first, then cornstarch, so the coating spreads evenly.

If you want the same base technique for other sauces, see Air Fryer Tofu Cubes.

Why Isn’t My Air Fryer Tofu Crispy?

If the tofu stayed soft, it was usually too wet to start, too crowded in the basket, or not cooked long enough to brown. Air fryers vary, so color and texture matter more than the timer alone.

Look for a dry, lightly crisp surface and browned edges before you add the sauce. Once the glaze goes on, the crust will soften a bit, so the tofu should be fully crisp first.

Gluten-Free Gochujang Tofu

Use certified gluten-free gochujang and tamari instead of soy sauce. Check the label on the gochujang carefully, since some brands contain wheat.

Variations

Smaller Tofu Bites

For appetizer-style bites, cut the tofu into 1/2- to 3/4-inch pieces. They usually cook a little faster, about 8 to 12 minutes at 390°F (200°C), so shake twice and start checking early.

Gochujang Tofu Marinade

If you want more flavor inside the tofu, thin the sauce with 1 to 2 extra tablespoons of water and marinate the tofu for 15 to 30 minutes. Pat it dry, dust lightly with about 1 tablespoon cornstarch, then air fry and finish with a little fresh sauce. Avoid putting a wet, sugar-heavy marinade straight into the basket, since it can scorch.

What to Serve with Air Fryer Gochujang Tofu

  • Steamed white rice, brown rice, or rice noodles
  • Grain bowls with cucumbers, greens, and extra green onions
  • Steamed or air-fried broccoli
  • Lettuce wraps with sesame seeds and a little extra sauce

For a milder option with vegetables built in, see Air Fryer Teriyaki Tofu with Broccoli.

How to Store and Reheat Air Fryer Gochujang Tofu

Refrigerate leftovers in an airtight container for 3 to 4 days. If you are meal-prepping, store the tofu and sauce separately so the coating stays as crisp as possible.

To reheat in the air fryer, cook at 350°F to 370°F (175°C to 188°C) for 3 to 5 minutes, just until warmed through and lightly crisp again at the edges. Longer reheating can dry the tofu out and darken the glaze.

You can also microwave it for 45 to 60 seconds, but the texture will be softer.
